Everyone knows what a clapper board is right? It's the black and white slate with a hinged portion that allows the camera shot to be marked (scene, shot, take) and the 'clap' allows the editors to sync the video with the audio. In QT's films, he had a tradition of getting the actors to face the camera and say "Hello Sally!" after the cut.

This is specifically for editor Sally Menke, who had worked on all of his films, up until her tragic death in 2010 from heat exhaustion whilst out hiking near LA.

She will be remembered for her slow paced dialogue cuts and fast action edits, now a trademark style of Tarantino's, who said of their relationship in an interview with Variety in 2007 (via Wiki Sources):

"The best collaborations are the director–editor teams, where they can finish each other's sentences"
