Cap dying wouldn't just be a shocking death for the sake of having that moment, or proving that they are prepared to kill off characters. Instead, it ties nicely into what we know of the story of the movie and how powerful and dangerous Thanos is.

The Mad Titan is the biggest threat the Avengers have ever faced, and they need to hammer that point home. If he can't kill even one Avenger, then is he really all that? And, if he accomplishes his goal and does wipe out half the universe, then heroes have to go too.

Captain America, as we know, is going to be at the centre of Earth's final stand, which takes place on Wakanda. It's here the biggest army of characters with assemble, to face off against the Outriders and eventually Thanos himself. With this taking the entire third act, it's entirely fitting it'd be the place for Cap, the biggest character on Wakanda, to die, after having rejoined the fight.
