Steve Rogers said that way back in Captain America: The First Avenger, before he had even transformed into the titular hero, and it's the line that continues to best define him even after everything he's been through. Thanos, meanwhile, is the biggest bully in the playground that is the MCU.

Steve is the man who'll fight for what he believes in, who'll stand up for his country, for the little guy, and for his friends. There is no one on the roster of heroes who better represents the antithesis of Thanos than him, and that's why he's the perfect choice to go down fighting against him.

It fits, too, with how far he's come. He was created as a weapon and someone to uphold the American Dream, but his arc has taken him away from being the government's tool. He's truly his own man now, which means it's an even better time for him to make the ultimate sacrifice against this being hell-bent on destruction.

Now, onto why he might not die...
