In The Original

Maurice is captured by The Beast for trespassing after he is attacked by wolves in the forest and accidentally stumbles across the castle, looking for sanctuary.

In The Remake

In the remake, Maurice didn't know the castle was there, as in the original - he couldn't, because of the enchantment, not that Beast cares - and while he does trespass with pretty serious reckless abandon, even sitting down for a meal, his crime is something else entirely.

While fleeing for his life, Maurice stops in the gardens to steal a single rose - because Belle requested one - which apparently is a grave enough crime to warrant life imprisonment in a dungeon. Incidentally, that's the original storyline from the book, which was left out of the cartoon.
