In The Original

When Maurice is captured by The Beast, Belle finds out and goes to plead with his captor to free him, ashe's old and frail and wouldn't survive. She parlays his freedom in exchange for her own, becoming Beast's captive in his place.

In The Remake

Emotionally allied to Beast by their shared past experiences (more of which soon), Belle is drawn to the tragedy of his situation, and stays partly due to that.

She also stays to help the enchanted servants in the castle, aware that they are cursed and saddened by the tragedy of their situation. It's not so much a grudging respect of her promise, but a duty to help that keeps her in the castle.
