Why?
Peter Quill can't live happily ever after with his pops, now can he? It wouldn't suit what we expect from the Guardians as characters, or the archetype of an absentee father who seems all too aware of the existence of his son.
There are lots of mysteries around Kurt Russell's Ego, but one of the most compelling rumours suggests that he's actually going to be the villain of the piece (or one of them). He's obviously not a good guy, because he singularly failed to make an appearance in Peter's life, and it would be the most fitting development for him to be a real villain. It's not like Ego is a good guy in the comics, and it's not like he's the kind of character who would even remotely care he had a kid, anyway.
If he turns out to be a villain, the rule of the MCU states quite openly that he has to die. Because they don't recycle any unless they're called Loki, or they're kept aside to die in the next film's opening sequence.
