1. Luke Meets Biggs At Tosche Station - A New Hope

And finally, no omitted scene is as egregious or lamented by fans as the sequence from A New Hope in which Luke meets up with his old pal Biggs Darklighter, who is on leave from the Imperial Academy in Tatooine.

The scene does last over three minutes in fairness and neither Mark Hamill nor Garrick Hagon are exactly giving sterling performances here, but it is nevertheless a great scene because it nods towards the growing rebellion, fleshes out Luke's personal obligations and strengthens the bond between him and Biggs in a meaningful way.

Biggs' death in A New Hope would've felt more palpably emotional if this scene was included, rather than the shoulder shrug that it is because Lucas made the wrong call.
