2. The Rebellion Begins - Revenge Of The Sith

While the prequel trilogy was rightly lambasted for giving too much screen time to boring political discussions, probably the most vital and interesting one of all didn't even make it into the final movie.

The deleted scene depicts the beginnings of the Rebel Alliance, as Padme, Bail Organa, Mon Mothma and others discuss what can be done to repel Palpatine's abuse of power, which of course threatens galactic democracy.

While most of the prequel politicking is snooze-inducingly dull, this one is actually laced with genuinely captivating drama and intrigue. Given how pivotal the formation of the rebels is in the Star Wars universe, it's absolutely ludicrous that something so seminal wasn't even included in the final film.
