1. Darth Revan
Arguably the most important character in the SWEU is Darth Revan. Revan, in the canon, is the great hero of the Mandalorian Wars and is the Old Republic's success story of redemption, as he fell to the dark side but returned to the light and saved the Republic: twice. His story is a major one - not only making up the events of the Knights of the Old Republic video game - but also inspiring a novel, a sequel to KOTOR and appearing in the Old Republic online game.
Why Make It? Well, why not? Why would you be that dumb? Revan and the Old Republic universe can be used to (literally) make films for the next 15 years of movies. The events of KOTOR is a trilogy in itself. It can open up to focus on Revan, his relationship with his wife, and his encounter with the Sith Emperor. This is a goldmine waiting for a good director, a strong script, and a desire to stay loyal to the canon. Although - if this happens - I hope Revan receives a more gallant death than that presented in the Old Republic mission.
