KOTOR might be different in a lot of ways, but it's not so unrecognisable that it would alienate fans declaring that it 'isn't Star Wars' (even though what Star Wars is isn't fully defined and everyone has a different idea).
There are still conflicting notions of good and evil, albeit presented in interesting new ways, along with huge battles, epic lightsaber duels, and plenty of heroes and villains to cheer and jeer.
The same can be said for Weiss and Benioff too: it's a totally different universe to Game of Thrones, and yet still plays to some of their recognisable strengths with deep characters, a complex narrative web, big twists, and a medieval setting. It's almost too obvious, really.
