1. There's A Good Chance Of It Happening

Again, this partly comes back to the original statement, which made no mention of it being an original story. That does suggest they've at least go the option of choosing to adapt and, since they wanted to adapt A Song of Ice and Fire, this is the kind of the Star Wars story they'd be attracted to.

Furthermore, Disney CEO Bob Iger revealed that they are looking at a specific point in the Star Wars mythology:

There's a vast lore to play with here, so that doesn't confirm anything, but if you were to ask a Star Wars fan to name a time period or piece of lore apart from the ones we've already seen on screen, chances are the answer you'd get is the Old Republic. It makes perfect sense for these two creators in particular, given their work on Thrones, and in turn - with their track record, skills s writers and producers, and what Star Wars needs going forward - is the best possible option on the table.
