1. Ludwig - Bloodborne

We couldn't limit FromSoftware to just one game on this list, because it simply wouldn't be fair to exclude one of their all-time greatest and most beloved bosses, Ludwig from Bloodborne's The Old Hunters DLC.

The first phase sees players battling Ludwig, the Accursed, a revolting horse-like creature whose many flailing limbs can deal massage damage to the player, and even if you keep your distance, he'll just spit at you.

If you manage to evade his unpredictable attacks long enough to chip away at his health bar, he'll appear to perish in a cutscene, only to be roused by the Holy Moonlight Sword, kickstarting phase two, where Ludwig goes by the moniker Ludwig, the Holy Blade.

Ludwig is now even mightier than before, less beast and more sword-totting humanoid, and therefore considerably more focused in his attacks.

Combined with the ultra-atmospheric setting and incredible music, this all ensures Ludwig is a tricky FromSoftware boss battle that doesn't feel like it's torturing players just for the sake of it.
