5. Head For The Drink
GTA V reintroduced swimming underwater to the franchise (after it was conspicuously absent in GTA IV), and allowed players to use a submarine, opening up a whole new area to hide yourself in. There's also a large selection of aquatic vehicles, all of which are great for getting away from the boys in blue. If you find yourself near one of the mariners, or indeed, if you can make it to the sea in your car, this is a great method of escaping a big wanted level. Cops will use their own boats to hunt you down, but they're often out in much less force than their land-based brethren. If you can make it to a boat, you should be able to get away rather quickly; just put your foot down and head in a straight line along the coast. It may take a while but eventually you will lose your pursuers. Just watch out for sharks! Combine this method with the next for great results.
