Each chapter of the game is essentially a folder of concept art, and as you'll have built up the "P" currency needed to unlock said folders from playing, just pick your favourite parts of the story and dive in.

I recommend all the art put into rendering Jackson and that sunset in the intro, alongside Joel and Ellie riding their horses across all those fields in the first half.
