The most conclusive theory so far (and yet to be disproven) is the fact that we are technically watching two times running at once - ahem, Saw III. Could we really be watching a modern day park with Ford and his men, and William and Logan 30 years in the past, leading up to that big disaster.
Let's look a little deeper - when William and Logan arrive in the Westworld terminal there is a different logo to the one we see plastered round the park, and it has cropped up a couple of times, just like when Bernard was in the old part of the park digging up archive data.
Here we also saw a cameo of Yul Brynner's original gunslinger, further pointing to a bygone era. If you want to know more, there is a whole video on it...
So far William and Logan have only had dealings with Dolores (the oldest host in the park) and Clementine, a robot that Luke Hemsworth's Stubbs said "has done the job before." The rest of the hosts (Teddy, Maeve, Hector) are yet to interact with William and Logan, probably because they aren't even built yet.
Also, when the two arrived in Sweetwater there were civil war men recruiting for the army; when we see Teddy's arrival the men have been replaced by the Sheriff looking for bandits. Given that Nolan's past works include Momento, screwing with time is part of his résumé.
This theory is so close to being confirmed, it has to be true - which leads us neatly on to...
