One of the first examples of Asian Americans on television portrayed in a positive light, Hikaru Sulu's appearances in The Original Series are nothing short of iconic.
Although largely a helmsman and physicist, Sulu's interests and hobbies were broad across his tenure aboard The Enterprise, including a ruthless physical fitness regime, study of ancient weaponry, botany and, most notably fencing. Famously appearing shirtless with foil in one hand and Uhura in another (whilst under the influence of an inhibition reducing compound), Spock once commented that Sulu was at heart a swashbuckler out of the 18th century'.
As well as continuing his journeys in The Animated Series, Sulu would appear again in the Voyager episode 'Flashback', in which Janeway mind-melds with Tuvok and shares his memory of his time aboard the USS Excelsior under suave tea enthusiast Captain Sulu.
The aforementioned shirtless swashbuckling would again crop up in Short Treks, as a tardigrade named Ephraim accidentally latches on to the Enterprise whilst travelling the mycelial network, witnessing important events from the original series.
