So Iron Fist's story ended when he somehow regained his 'glow power' and Luke's story ended when he became a semi-tyrannical nightclub owner? No, of course they didn't. These 'endings' were never meant to be closures for their characters.

Netflix could give us Just one feature episode each to tie up all the loose ends, like the Sense8 finale. You can either make that the Heroes for Hire jaunt or you can do one for each show.

One way or another, you will have the audience on your side. People may not want to trawl through another ten to thirteen episodes, which is fair, but everyone would love the chance to see how the Luke Cage and Iron Fist sagas really ended. So keep it brief if necessary, but let's have the closure that viewers deserved. They're the ones who invested their time in these shows to begin with.
