While Rhaegal and Viserion never really established any sense of personality, Drogon did manage to do so, especially in Season 8. From the first episode, when he looks at Jon with a face that'd become instantly memed, there was a much clearer sense of Drogon's character.

That came in handy as the season wore on and Dany went darker: yes, he was a destructive weapon, but also an intelligent creature who quite obviously felt a lot for his mother. He'll be remembered for the scene where he burns down the Iron Throne, which is pretty great, but much better is him nosing Dany's lifeless body, with a CGI dragon somehow wringing a lot of emotion out of the moment.
