Bronn is a character who has long since served any narrative purpose, but the show has found ways of keeping him around because he's such a huge fan-favourite.

In Season 8, he was given a new mission: kill the Lannister brothers at the behest of Cersei. In that moment, it seemed like a genuinely interesting subplot. Here's a man who has always said the only thing he cares about is gold and a castle, and that's going to be put to the test against the two people closest to him. The struggles of that could've been fascinating, but then Bronn simply Grandpa Simpson'd his way in and out of an inn, and that was that.

He disappears for an episode, and then returns at the very as part of the Small Council, because for some reason the sellsword is trusted to be Master of Coin. There's a sense of irony in that, at least, and it's hard to begrudge him getting a castle, but he's another they just didn't know what to do with.
