Although for a while, many believed The Waitress was in fact called Nikki Potnick, this theory was debunked by writer and actor Glenn Howerton (Dennis) on Twitter, as he revealed that Potnick was merely a friend of The Gang's from high school.

So, with that theory debunked, the question still remains as to what her name is. Surely after 14 seasons there has to be a reason why they haven't mentioned it, right?

Sure, perhaps it's nothing more than a running gag with the purpose of highlighting just how plain and forgettable The Waitress is to The Gang but that doesn't explain why Charlie never says her name, as he surely must know it! Could the reason be that he only refers to her as The Waitress because that's the only way The Gang knows her? No, because he calls her that in various fantasies and rants he has by himself throughout the show.

The reason why Charlie never speaks her name is because that would shatter the illusion that he has created for himself. Charlie does indeed love A Waitress (Dee), but not THE Waitress.
