3. Mai Tai
The sweet Mai Tai was seen first in Mad Men with Rachel Menken whilst being wooed by Don Draper (Menken, not the Mai Tai). The Mai Tai is not unlike the Blue Hawaiian in the sense that it utilises the sweetness of fruit to disguise the harshness of quite a large dose of alcohol. The Mai Tai is less outrageous than the Blue Hawaiian, using classic tropical flavours and colours to achieve its ends, but inevitably gets there just as well. You can jazz up your Mai Tai with other tropical juices, such as pineapple or passionfruit, to give it an edge of your choice but if you've got the goods then go with the traditional citrus version. Another point to note is that the Mai Tai is officially one of your five a day (probably).
Ingredients: 30ml light rum 30ml dark rum 15ml lime juice 15ml orange curacao 15ml orgeat syrup Maraschino cherry
Preparation: Mix all the ingredients except the dark rum over ice. Top with the dark rum, and then garnish with a maraschino cherry (cocktail umbrella also an option).
