Hellhounds have many faces - sometimes quite literally so. He is mostly depicted as a supernatural, massive dog in folklore.

A wide variety of ominous or hellish supernatural dogs occur in mythologies all around the world, featuring attributes such as mangled black fur, glowing red eyes, super strength and speed, ghostly or phantom characteristics, and a foul odour. In ancient myth they have three or more heads, and are the gloomy security guards on the doorstep to hell.

The Supernatural version of these bad boys are ballistic and maniacal canine-like beasts, specifically serving demons and other dark entities. Described here as demonic pitbulls, Hellhounds are ferocious and terrifying that inspire fear in humans, demons, and even in angels (which are pretty creepy themselves, as we find out later).

Over time they became the collectors of human souls whose deals had come due. The Hellhounds in Supernatural can only be seen by those whom they have come for, making them a sort of pet Grim Reaper. In later seasons, Hellhounds are seen working for various other demons, usually acting as foot soldiers or guard dogs.
