Matt Riddle is a bit of an exception to the "can't count fighters who also wrestled full time" rule only because he is so incredibly new to the world of pro wrestling, at least as an active wrestler. Riddle spent most of his career in the UFC, where he was a very popular undercard fighter, having got his start on The Ultimate Fighter reality series. However, after a couple of failed drug tests for marijuana - for which he has a medical exemption - he found himself at odds with Dana White, and was soon cut from the company. A potential deal with Bellator fell through, so he opted to train at the Monster Factory, and even try out for the WWE. While he didn't get signed on immediately, the promotion did help him land a gig on the indy scene, and he has now reportedly signed a developmental contract. So one day soon, you might just see Matt Riddle in the WWE.
