7. Star Wars: X-Wing
This whole series is just fun. It's like Top Gun, Star Wars style, without the volleyball. From tackling the remnants of the empire to dealing with the horrific Yuuzahn Vong "organic ships" these books mainly follow Wedge Antilles, the only other guy to survive the fight against the original Death Star and the other pilots under his command. There's both humor, action, and trajedy all at the same time making the X-Wing books some of most accessible expanded universe stories to pick up for a non-Star Wars fan, but also just a good read for anyone in general. As a movie X-Wing would be totally sweet. Once again, imagine a story dedicated to space dog fights like Top Gun... without the volleyball.
