Dex's only scene in the saga came in 2002's Attack of the Clones, and it's one probably best remembered for its inexplicably Americanized diner, rather than for its overall significance in the story.

But Dex's role is one that shapes the entire narrative as we know it, and it's so glaringly obvious that you'll kick yourself for missing it.

During Obi-Wan's investigation of the assassination attempt on Senator Amidala, he hits a dead end when the would-be assassin is killed before interrogation. His only lead is a poison dart, so he goes to see his friend Dex, who has a little information for him: it's from the planet Kamino.

Dex is seemingly the only one on Coruscant to have heard of Kamino (including the extensive Jedi archives, from which all traces of the planet were removed). Had Obi-Wan not asked Dex for help, he never would have found Jango Fett or the secret clone army that the Republic used to fight against the Separatists.

In fact, the clone army would have instead been utilised by the Sith to destroy the Jedi and the Republic long before Luke and Leia were ever conceived, meaning that the Empire might never have fallen.
