Revenge of the Sith was released in 2005, and to be fair to Lucas and co., it did round everything off nice and neatly.
However, not only did time prove this tag-line to be a lie, but Lucas himself admitted that he had had specific plans for a sequel storyline, meaning that even if Disney hadn't revived the franchise with the sequel trilogy, it's likely that Lucas would have anyway.
After the success of the sequel trilogy, and of Rogue One: A Star Wars Story, it's hard to imagine the Star Wars saga ever truly being complete. After all, it's a big old universe.
