Here's an easter egg not in the films themselves, but hidden on the original trilogy DVDs. On the special features disc (available in the original DVD release from 2004, but not subsequent releases), selecting Video Game & Still Galleries and then entering 1-1-3-8 (that number again) takes you to a series of outtakes and other behind-the-scenes footage from the shooting of the films. There's some real gems in here.

On the humour side we see Boba Fett chasing an Ewok and Vader struggling to lift the Emperor, but there's also some insight into the film-making process, including a break-down of how the Han-Vader confrontation on Cloud City was shot and a look at how they created the illusion of big creatures for the actors (cardboard cut outs it seems). If you don't have the DVD (or can't be bothered to dig it out), the video is below.

There's also hidden easter eggs on the prequel DVDs, with the first two films giving another gag reel and the third showing a break-dancing Yoda.
