In The Book
In response to Dolores Umbridge sacking Sybill Trelawney, the headmaster trolled the villainess by hiring Firenze the centaur to teach Divination to annoy her further. Sadly for him, his colony turned on him, seeing his job as servitude and attempting to kill him, but for the intervention of Hagrid.
In The Film
Firenze appears in the Philosopher's Stone, but then he's cut from the movie series entirely. No teaching job. No clash with Umbridge or his own kind. No appearance at the Battle Of Hogwarts.
Was It A Positive Cut?
Firenze might well be the coolest character cut from the movies, and having him teach at Hogwarts - particularly to annoy Umbridge - would have been a great spectacle. Unfortunately, the effects work wasn't great, so a harsh classroom light may have been a little too unforgiving.
