Easily one of the most famous X-Men movie mistakes comes in the first act of the first movie, when Wolverine is carelessly driving Rogue in his truck without a seat-belt on, and he drives into a strategically downed tree by his brother/enemy who he doesn't remember, Sabretooth.

The truck is understandably ruined, but then just a few shots later, it miraculously repairs itself so that Wolverine can smash through the unbroken windshield.
