Just when you start to realise that he isn't a gigantic marshmallow, here's another revelation: it's a guy in a costume. That guy is Bill Bryson, who created and eventually donned the latex suit. This particular shot was achieved by creating a miniature Central Park. In other shots, such as the shots of him walking down the street was accomplished by film suit against a blue screen and inserting him into footage of real street.

Looking back, it's actually pretty amazing that the effect of him being a giant being was so believable. That's the magic of cinema, isn't it? Either way, I don't think that Dan Aykroyd would be so afraid if he saw him at this size.
