Oliver Wood was pretty prominent back in the days of the Philosopher's Stone. He was good looking, he was Scottish, he was an athlete, and he also happened to be the captain of the Gryffindor quidditch team. Could he be any more desirable? The best thing about Oliver was his passion, especially when it came to quidditch. It is this kind of passion that would most likely attract the normally straight-laced and studious Hermione Granger.

To make him even more appealing, Oliver was also a great mentor to Hermione's pal Harry Potter. In fact, it was Oliver who first introduced Harry to the rules of quidditch and the role of the seeker. As we know, Hermione was fiercely loyal to her friends therefore this kind of behaviour would probably attract her even more.

Annoyingly, we never got the chance to see if the pair would work out. Oliver was a few years older than Hermione so he graduated Hogwarts early on and wasn't seen again until briefly during the second wizarding war.
