2. Knights Of The Old Republic
When BioWare was given the opportunity to work on a Star Wars video game, the developing team had a choice - they could adapt Star Wars: Attack of the Clones or make a prequel set 4,000 years in the past. Even though adapting a movie tie-in would be the obvious move, BioWare went for the latter, creating Star Wars: Knights of the Old Republic.
Like most bold decisions, making a role-playing game revolving around the early days of the Jedi was a genius idea. KOTOR wasn't tied down by the movies' continuity, allowing the developers to craft their own story and expand the history of the Star Wars universe.
Not only that, the game introduced arguably the most iconic Star Wars characters outside of the films - Darth Revan and Darth Malak. Even though the Sith are often perceived as uncompromisingly malevolent, KOTOR helped humanise them with the characterisation of Revan and Malak.
The game's story is so extensive, there's more than enough material to fill a multi-season series. Why Disney greenlit Star Wars: Forces of Destiny but not a KOTOR TV adaptation is anybody's guess.
