There are two stories which explain how and why Grievous became a cyborg, and whilst the more official story is fantastic in terms of its development, the non-canon Legends story is far superior in almost every way.

The official Star Wars canon basically states that Grievous wanted to be as powerful as he could possibly be, and willingly turned himself into a machine, despite his lungs struggling to adapt to his new "upgrades" and giving him a nasty cough.

In the Legends version, though, Darth Sidious and Count Dooku plotted to mould Grievous into a killing machine that would best suit their plans. To do so, they bombed the General's ship and blamed it on the Jedi. Grievous' body was almost entirely unsalvageable, and the Banking Clan used a new form of technology to turn him into a cyborg.

This explanation also states that Dooku manipulated his memories and emotions, making him angrier and more antagonistic toward the Jedi. He also used the blood of the late Jedi Master Sifo-Dyas to keep him alive whilst his body was rebuilt, and that this made him more powerful because of the blood's Force content.

Makes you wonder why none of Grevious' story has been made into a movie, doesn't it?
