Speaking of seeing the Jedi at the height of their power, the Republic's supremacy is intrinsically linked to that of the Jedi throughout its history, so with one being at the height of its power, so too must the other.

As much as it might stretch the imagination when it comes to entertainment, being able to see the inner workings of the Republic would be an opportunity to understand just how it all went to hell the way it did at the start of The Phantom Menace. Obviously we know the Sith played a massive part in the fall of the Republic and the Jedi, but the problems were already there before they ever started interfering.

One of the biggest criticisms of the prequel trilogy was that the Republic's downfall was never really explored to the fullest extent it could have, or explained at all in any of the films.

What we do know through the expanded media is that there were lingering issues for decades, if not centuries, that caused the Republic to fracture internally. Seeing how it worked before the fall would benefit the saga as a whole.
