The game does offer the ability to sneak up behind people and hit L2/LT to take them down (again, Stealth level dependant on yours vs. theirs), but you can also start playing Kingdom Come: Deliverance more like Hitman.

Which is to say, once you've downed a Cuman, steal their garments and in particular, their clan colours and mask. Either the black and white topper or yellow and black combined with a mask will mean you can walk through their camps undisturbed - even sleeping in their beds.

Best of all, find any wayward wine pouch lying around and you can poison it, usually downing the entire camp in a few minutes as they'll drink from it, one by one.

Also note that going near any tied-up horse's head will give you the option to "Stampede" - a great way to deal damage to any group of foes if the alarm has been raised. Just note that the horse will charge in the direction you're looking.
