6. The "Night Folk"

You might go the entirety of RDR 2 without encountering the so-called "Night Folk". Hell, in my playthrough, I only saw one of them, carrying a dead body to god-knows where, and assumed he was just a random murderer; a one-off interaction I'd stumbled upon.

It turned out, however, that the murderer was actually part of a strange cult who haunts the swamps of the Bayou at night. You can come across gangs of these ravagers, usually covered head to toe in skin diseases, cuts and dirt, on the prowl for their latest victims. They're like an even more aggressive version of the Murfree Brood you find in the North of the map, talking only in grunts and moans, with it being rumoured that they're not actually human.

You probably don't want to stick around and check that out for yourself, as they'll attack you on sight, and are usually surrounded by the grisly remains of their previous victims.
