3. Even Stranger Side Quests

The side quests in the original Red Dead Redemption were so good because they captured a side of the Wild West rarely ever explored in visual media.

Focusing primarily on the mystery of the setting by exploring some semi-supernatural tales, the strange sub-plots of the original game were often more open-ended and ambiguous than anything found in the main narrative.

Going forward though Rockstar should amp up the production of these missions massively, while striving to retain the same eerie tone found in in the original. Westerns are set up perfectly to facilitate plots that are full of mystery and unexplained phenomenon, and the genre is home to plenty of spooky tales about the Old West that Rockstar could easily capitalise on.

Not every side mission needs to be like this of course (it would sort of lose its charm over 40 hours), but it would be disappointing if the developers wasted Red Dead 2's great backdrop and freedom to explore a wide variety of other genres within the game.
