Erik Campbell (Richard Harmon) was the easy MVP of Final Destination Bloodlines; an effortlessly likeable character with a fascinating, expectation-defying arc.

Once it's revealed that Erik is the product of an affair and therefore not part of the bloodline being targeted by Death, he takes on the role of protector, desperately trying to help the rest of his family avoid Death's scythe.

While we're led to assume that Erik is effectively "safe" for the rest of the movie, that's shown not to be the case, as while trying to save his half-brother Bobby (Owen Patrick Joyner) by inducing a peanut allergy and reviving him, he himself is picked off.

Ultimately, Erik is foiled by a malfunctioning MRI machine in the hospital, which rips his many piercings out, pulls him towards it, and then seals the deal by impaling and crushing him with a wheelchair. It's by far the most impactful death scene in the film, due to both Erik's likeability and the creative brutality of his demise. 

As for why Death killed him despite not being on the list? As Iris (Gabrielle Rose) warned earlier on, "Death doesn't like it when you f**k with its plans," so it's not above going off-piste and killing those who try to give its targets a helping hand.
