As you go through the ride you'll hear various bits of conversation from the different pirates, although as Walt noted you'll need multiple trips to be able to hear each one individually, and there'll be some recognisable voices in there too. 

For example, Johnny Depp lent his voice to the animatronic version of Jack Sparrow, but more than that are the Disney park regularly who appear. The most notable is Paul Frees, who voices a number of pirates throughout the ride, and is also the Ghost Host from The Haunted Mansion. As a tribute to his work on the ride, recordings of his voice can be heard in Pirates of the Caribbean: At World's End. 

Another Haunted Mansion stalwart, Thurl Ravenscroft, also does some of the voices throughout the ride. He's best known for being the voice of Tony the Tiger, voicing the lead singing of the singing busts, and frequently being mistaken for Walt Disney.
