Everything you say to Siri? Yeah, those questions (and ensuing answers) all get sent to Apple and the data stored. For two years. Which means that, mostly, they've got a whole lot of instances of their supposedly helpful voice controlled AI thing totally mishearing your request for the closest pizza place and giving directions to the Leaning Tower Of Pisa. But it also means that Apple are keeping a huge amount of personal information on you. Granted, at present it's probably mostly so they can fine-tune Siri's programming to recognise more phrases and offer up better answers, but the idea that so much data is being hoarded is a little worrying. Apple are famous for their Super Bowl commercial, directed by Ridley Scott, which riffed on George Orwell's 1984; ironically, it looks like they're building their own Big Brother-style surveillance state. Maybe keep an eye on the agreements when you install new Apple software, eh.
