2. There's Nothing Else Quite Like It

Here's the thing about Hannibal: there wasn't and still isn't anything like it on TV. (The closest comparison I could think of is the criminally overlooked Mindhunter, but even that fell victim to cancellation once David Fincher decided to pursue other projects.)

The series worked as the perfect psychological thriller, but the devil was really in the details. The show, like Hannibal himself, was presented immaculately. It wasn't just another cop show with a creepy twist; it had nuance, style, and a tremendous selection of talent both in front of and behind the camera.

Hannibal's absence has really been felt since it was cancelled. Yes there's always the opportunity to revisit it - a prospect made ever easier thanks to its presence on Netflix - but that doesn't beat having something new to look forward to.

TV cancellations absolutely SUCK and while obviously nothing should last forever, Hannibal still had more left to give. The arrival of Clarice to CBS might provide some consolation to fans, but it won't feature the cast or crew that made Hannibal so special.
