This one is obvious, Breaking Bad always had its keen narrative eye set on Walt & Jesse, everything that happened in their tale was related back to them in some way.

Better Call Saul actually departs from the title and often just goes off on other tangents, other parts of the story that will wind up relevant to other characters other than Saul Goodman. whilst Saul is still the star of the show, the series itself isn't constrained by him as tightly as Breaking Bad was by the meth duo.

Mike's whole story for a few seasons there was actually totally separated from Jimmy McGill's, they had different stories going on without really ever really crossing paths. It could be argued that Better Call Saul is as much about Mike as it is Jimmy.

Another example is Nacho's whole situation with his father and his loyalties to the Cartel being divided. In many ways, Nacho has become the Jesse of Better Call Saul, he is tied to a force of pure cunning in the same way that Jesse was, he has done things that he never wanted to do, and he will certainly be put in harm's way if it benefits his employers.

The simple truth of Better Call Saul is that without the intense focus of Walter White, a better world is built all around New Mexico.
