2. Stan Smith
In the same way that Homer Simpson and Peter Griffin are the main characters in Springfield and Quahog, Stan is the patriarch of the Smith family, with the majority of the stories in Langley Falls revolving around him in some way.
The entire premise of the show was the antics of a paranoid, republican CIA agent and his family in a post-9/11 world, and for a long time Stan adhered to this character. He was automatically suspicious of the Memaris, he was mistrustful of gay people in general, and he wasn't happy when his wife started earning more money than him.
However, he soon developed more layers, as his job at the CIA became more of a device to introduce weird and wonderful characters and technology rather than an actual part of his character. He also began to embrace all walks of life, even going so far as to try and force himself to be gay in order to speak at a conference.
From the pilot episode to where we are now in season 16, Stan is damn near unrecognisable as a character other than that chin, and though fans fell in love with him straight away, this is most definitely a good thing.
