As long as Roose stood in the way and sought a real heir, Ramsay could never rise to the position of power he craved. That was always a good thing for the rest of Westeros: Roose was basically Ramsays leash and as long as he was there to cast disapproving looks at him, Ramsay was dialled down a little.

Unfortunately, Roose was also the source of Ramsays evil (at least partly): he wanted to impress his father to feel legitimate, but he wasnt equipped with the moral compass a normal upbringing might have given him. With that, he might not have got his kicks raping and torturing lovers.

So Roose dying was a strangely jarring thing: he was the villain who victimised even the biggest villain in Westeros, so he needed to die. But as soon as he was stabbed, Ramsay was unleashed completely, which spells disaster for pretty much everyone.

Luckily, the caveat there is it opens Winterfell to the War Of The Bastards (thanks to Ramsays lovely letter to Jon), so he died for a good narrative reason.
