2. Because Dragons Can't Be Enough
There's a very big reason why we shouldn't believe the dragon hype to the point of imagining that they will be invincible. We're being led to believe that the dragons will be key components when the Night King attacks south of the Wall - that they will poetically come to the rescue of men, since fire trumps ice.
But if dragons were enough when the Long Night came, we wouldn't have been fed hints of Azor Ahai, the importance of Dragonglass or Valyrian Steel for the past six and a bit seasons of Game Of Thrones. The simple fact is, when it comes to the Night King, nothing is as simple as throwing dragons at it. They might have a part to play in the end, but they won't be the deciding factor at all, and the best way to show that is to make at least one of them expendable.
So even if we see the dragons make it through whatever obstacles lie before Dany before the war of men, when they come face to face with the White Walkers, they're going to face a danger unlike anything they've even considered. And it's just as intriguing to think that ice extinguishes fire as much as fire melts ice.
