Sandor Clegane spend his time in this episode doing what he does best: drinking, grumbling and shooting off swearwords and insults like nobody's business. He also sticks out like a sore thumb because he doesn't feel at all like he fits in, ignoring the frivolities of the celebration (and the chance of some care-free Northern sex) and generally turning his lip up at everyone.
We at last get to see him and Sansa talking too, which gives her a chance to reaffirm how different she is (she's definitely got some strong young Cersei vibes going on) from the girl he left in King's Landing. There's also a nice line in there about how her arduous journey has shaped what she has become and the suggestion that she wouldn't change her past.
And speaking of heinous pasts, the most important take-away from The Hound's episode is that he's going to go and deal with his "unfinished business" in King's Landing. In other words, he's going to deal with his brother and we're going to get Cleganebowl.
Interestingly, Arya follows up her denial of Gendry's proposal by following The Hound south - two outsiders together with unfinished, bloody business to get to. They were never going to sit out the fight and honestly, it's a lot better that their parts in the final reckoning have been reshaped to be more personal than just being parts in a big battle.
