When she left the fray at the end of season 7, it looked like Melisandre's powers weren't all they were made out to be. Sure she had some pretty impressive tricks in her arsenal, but her fundamental inability to get a single prophecy correct sort of worked against her.
The Battle Of Winterfell at least gave her an opportunity to give a better account of herself and while it would have been great to see her bringing the Fiery Hand army from the books, her lighting the Dothraki swords and then the defensive pit around Winterfell were great moments. No matter how briefly they lasted.
She was always going to die, so she did get one thing right at least (but then she took her own life, so it's a bit of a cheat). Her final moments were strange but fitting - almost like she realised her usefulness had run out and all that was left for her was death. Good allegory for all of us Thrones writers right now, really.
