3. She Was Supposed To Meet Scotty
The original script for Relics features Guinan as the one who interacts with Scotty in Ten Forward. Thematically, this makes sense - Guinan had lived in Scotty's time, so even a brief scene of them together could ease the engineer into his new surroundings.
The script was largely similar to what was broadcast - Guinan would serve Scotty something 'green', echoing the line from By Any Other Name, rather than Data. However, when it came around to shooting the episode, Guinan had already been switched for a waiter and Data himself.
Perhaps this was due to Goldberg's availability, or was simply a case of editing to save some money on the final product - this episode did introduce the Dyson Sphere after all. Still, seeing Guinan interact with one of the original series crew would have made for a fun moment - so thankfully this did finally come to pass in Star Trek: Generations.
