In Highlander we’re never given a clear backstory for the immortals or the game; they both just exist. Unfortunately, the studio wrote themselves into a corner with the ending, since Connor won the game and became mortal at the end.

They had to come up with something to justify a sequel; hence, the immortals are actually aliens. Yep, turns out they were exiled from their planet after a rebellion, their memories were wiped and they were made to fight each other to the death. It’s spectacularly dumb and creates about a million plot holes if you rewatch the original with that revelation in mind.

Why does an alien have a Scottish surname, how does the “No Fighting on religious ground” rule work if they’re aliens and so on. Subsequent sequels would ignore this retcon completely, but since all the sequels ignore each other anyway it’s impossible to tie the series together neatly.
