Sure, Jaime is missing the sword-hand that made him one of the most feared warriors in Westeros, but a bit (okay, a lot) more training with Bronn and he could be back to his best in no time.
A redemptive arc has been on the cards for this character for a long time (though he keeps doing things to remind us that he's really not a very nice person), and what better way to hammer this home and solidify his heroism by pitting him against the Night's King?
It's unlikely that Jamie would abandon what remains of his family and head north to impede his advance, but should the icy necromancer make it to the borders of King's Landing, he's definitely brave enough to set out to meet him in battle.
Plus, he has access to a Valyrian steel sword. He may have given Oathkeeper to Brienne, but remember his "nephew" Tommen still has Widow's Wail. The Kingslayer VS. The Night's King is a very exciting prospect indeed.
